Bring the tropics to you with this sweet and creamy treat! This smoothie is not only high in antioxidants like Vitamin C, it is also a great source of minerals like potassium and magnesium. The typical colada is high in processed sugar and alcohol which are definitely not the ideal fuel source, but the coconut milk in this beverage is high in MCT’s (medium chain triglycerides) which is a healthy fat your body uses for energy. Because fat provides more calories per gram than carbohydrates, certain fats (like MCT’s) are actually a better fuel source! Oh! Almost forgot to mention that the pineapple contains bromelain – a powerful enzyme that is beneficial for digestion, and don’t even get me started on the taste or we could be here for another few paragraphs…

Ingredients:
200-250 mL full fat Coconut Milk
1/2 cup frozen Banana
1/2 cup frozen Pineapple
1 tbsp toasted Coconut Flakes
drizzle of Honey

How to Make it:

  1. Add coconut milk to blender, If milk has separated into liquid and cream, simply add the entire contents of the can to the blender and blend for a few seconds until combined. Pour out extra milk into container and store in fridge for use within a few days.
  2. Toast Coconut flakes for about 1 minute on medium heat and add half to blender, while saving the other half to sprinkle on top.
  3. Add Banana, Pineapple and Honey to blender and blend until smooth and creamy.
  4. Pour into a glass and sprinkle the remaining Coconut flakes on top and enjoy! Serves 1.
