Summer is well on its way and that means its high time to do away with hot beverages. Break out the blender because its a perfect time to whip up a cool and sweet treat. What you will taste is a creamy, strawberry concoction, but what you are actually drinking is a great source of healthy fats, antioxidants, fibre and enzymes! Coconut milk is a great source of MCT’s (medium chain triglycerides) which do not have to be digested like long chain fatty acids, and provide an instant fuel source for your body to burn! Berries, like strawberries, are so concentrated with nutrients like Vitamin C, Potassium and Fibre, and are a great addition to any diet.
1 can full fat Coconut Milk
1 cup Strawberries, frozen
1/3 cup kefir or water
2 tbsp honey
How to Make it:
- Add all ingredients into a blender and blend on high until a smooth consistency is reached.
- If milkshake is too thick, add additional spoonfuls of water/kefir and blend until desired consistency is reached.
- Pour into two glasses and if available, garnish with sliced strawberries and coconut flakes.
