Basil is one of my favourite herbs to eat, and pesto is definitely my favourite way to enjoy it. Basil is not only delicious but also great for you. It is a great anti inflammatory and also full of antioxidants like Vitamin A and Vitamin K. Pesto is so versatile and can easily be used on vegetables, pasta, pizza and bread, salads and even as a marinade! This recipe will only take minutes to make and can be enjoyed immediately after.
2 cups of Basil
1/3 cup – 1/2 cup Olive Oil, depending on how thick you prefer
6 small cloves of Garlic
1 tbsp Lemon juice
1/4 cup of Almonds
Himalayan salt to taste
How To Make It:
- Add almonds to food processor/high powered blender and pulse for several seconds to break up.
- Add remainder of ingredients and pulse for more time until all ingredients are combined.
- Serve right away on pasta, bread, as a dip etc. Refrigerate any leftovers in a sealed container.
